Method
Step 1: Set-up
Remove the leaves of the cauliflower, revealing the stem. Trim the stem of the cauliflower so it is level.
Soak the cauliflower in salt water or vinegar water for few minutes before washing it with clear water to remove any dirt. Dry the excess of water with a tea towel.
In a bowl, combine the maple syrup, harissa pastes, limes zest and dried ingredients.
Preheat the oven at 200C.
Step 2: Seasoning
Use a basting brush to meticulously spread the mixture all over the cauliflower.
Place the cauliflower onto your Dutch oven and finalise with a drizzle of olive oil and squeeze of lemon juice.
Step 3: Cooking
Cover the Dutch oven with its lid, and place on the centre rack of the oven.
Bake for 35 minutes until the cauliflower is tender and pierces easily with a knife. Take off the lid bake for an additional 10 minutes to create a golden crispy texture.
Remove the cauliflower into the serving plate and sprinkle sea salt before serving.
