Banana bread is probably the most popular recipes to find online today! However, to make it perfect every time is a real challenge! This recipe was elaborate with the right techniques and simple ingredients to make it a success every time!

  • 2 completely ripe bananas – mashed

  • 150g slightly salted butter 

  • 140g caster sugar

  • 2 large eggs – beaten

  • 140g self-rising flour

  • 1 tsp of baking powder

Method

Step 1: Set-up

Pre-heat your oven to 180C/160C fan/gas 4. With a basting brush evenly butter the loaf tin and sprinkle flour to cover the entirety of the tin interior. – it should be an extreme thin layer - this is for an optimal release of the loaf from the tin.   

Step 2: Preparation

Place softened butter and sugar into large mixing bowl. Mix, using hand mixer or stand mixer on medium speed 1-2 minutes, or until butter mixture is pale yellow, light, and fluffy. Use a silicon spatula to scrape the sides of the bowl once or twice while mixing. 
Slowly combine 2 beaten large eggs and gradually incorporate the flour. We recommend using a sieve for the flour to avoid lump formation. Add the baking powder and the 2 mashed bananas.  
Gently fold the mixture to obtain a homogenous result. Do not overmix it could affect the integrity of the batter.  

Step 3: Cooking

Pour the batter into the loaf tin and insert it in the middle rack of the oven to bake for approximately 50 minutes.  
To check if the bread is cooked, insert a skewer into the centre, if the skewer comes out clean - or with just a crumb or two sticking to the skewer - it's ready. 
Remove the bread from the oven and let it cool on a rack. The rack will allow the air to circulate and avoid the bottom to get soggy. Respect the cooling process to get a firm structure and makes for cleaner slices.  

Step 4: Serving Suggestions

Banana bread can be served warm or cold, for breakfast, snack, or dessert. Complimented with rich topping it will impress any foodie!
